Stuffed Sweet Potatoes by Lucy
Here's a delicious dinner option that the whole family will enjoy! It's a very versatile recipe where you can substitute in or out anything you want. Feel free to have fun with it and add whatever veggies and dips you like. Also note, this recipe is vegan and gluten free!
Ingredients:
- Sweet Potatoes
- Chickpeas
- Herbs
- Garlic
- Avocado
- Tahini
Method:
- Pierce sweet potatoes and bake until they tender
- Add chickpeas, herbs and garlic in a bowl and mix together.
- Blend the avocado and tahini together to make a sauce.
- Cut a hole in the sweet potato to put the chickpeas and sauce in.
