Stuffed Peppers by Michelle
A recipe for the whole family to enjoy!
Ingredients:
Stuffed Peppers
- 250 minced beef
- 2 cups jasmine rice
- 2 large onions fried
- Two large tomatoes peeled and chopped
- Parsley (I use lots of the flat)
- 2 tablespoons of dried basil
- 2 tablespoons of tomato paste
- 3 garlic cloves minced
- 50ml canola veg oil
- 1/4 cup sweet chili sauce
- 1/2 flat teaspoon of paprika
- 1/4 flat teaspoon of sugar
- 1/2 flat teaspoon of salt
- 1/2 flat teaspoon of pepper
Sauce:
- 3 cups of boiling water
- 2 tablespoons of tomato paste
- 1/4 flat teaspoon of sugar
- 1/2 flat teaspoon of paprika
- 1/2 flat teaspoon of salt
- 1/2 flat teaspoon of pepper
Method:
- Sauté onions
- Rinse rice, peel tomatoes and chop thinly
- In a large pot, put rice, minced beef, tomatoes, fried onions, minced garlic, chopped parsley, dried basil, tomato paste, oil, sweet chili sauce, paprika, sugar, salt, pepper and mix well.
- Wash peppers, cut top off and discard seeds. Fill them up, tops on, pour sauce on (add water if needed)
- Bake for approximately one hour on 180° until soft and cooked through .
