Stuffed Peppers by Michelle

A recipe for the whole family to enjoy!

Ingredients:

Stuffed Peppers

  • 250 minced beef
  • 2 cups jasmine rice
  • 2 large onions fried
  • Two large tomatoes peeled and chopped
  • Parsley (I use lots of the flat)
  • 2 tablespoons of dried basil
  • 2 tablespoons of tomato paste
  • 3 garlic cloves minced
  • 50ml canola veg oil
  • 1/4 cup sweet chili sauce
  • 1/2 flat teaspoon of paprika
  • 1/4 flat teaspoon of sugar
  • 1/2 flat teaspoon of salt
  • 1/2 flat teaspoon of pepper


Sauce:

  • 3 cups of boiling water
  • 2 tablespoons of tomato paste
  • 1/4 flat teaspoon of sugar
  • 1/2 flat teaspoon of paprika
  • 1/2 flat teaspoon of salt
  • 1/2 flat teaspoon of pepper


Method:

  1. Sauté onions
  2. Rinse rice, peel tomatoes and chop thinly
  3. In a large pot, put rice, minced beef, tomatoes, fried onions, minced garlic, chopped parsley, dried basil, tomato paste, oil, sweet chili sauce, paprika, sugar, salt, pepper and mix well.
  4. Wash peppers, cut top off and discard seeds. Fill them up, tops on, pour sauce on (add water if needed)
  5. Bake for approximately one hour on 180° until soft and cooked through .
