Hearty Moroccan Soup by Amarvellouscreation

A winter household staple and the most popular request. This recipe has quite a lengthy list of ingredients but none are mandatory. Feel free to substitute any ingredients to your liking! Soups are super versatile - you can utilise any household produce and turn it into a creative bowl of nourishment. When creating soups, it is helpful to break the ingredients into three different components. These various layers each add their own unique layer of richness:

  • Grains & Legumes
  • Vegetables / Meats
  • Flavour [Herbs, Spices, Stocks]

Ingredients:

Grains & Legumes

  • 1/4 Cup Barley
  • 1/4 Cup Kidney beans
  • 1/4 Chickpeas
  • 1/4 Cup Lentils

*Note if using dried grains and legumes, to soak first before cooking

Vegetables

  • 1 Carrot
  • 2 Potatoes
  • 1 Zucchini
  • 2 Celery stalks
  • 1 Brown Onion
  • 1/2 Cup Pumpkin
  • 2 Cloves of Garlic [crushed]

*All vegetables to be diced

Flavour

  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Cumin
  • 2 tsp Smoked Paprika
  • Salt & Pepper
  • Basil handful
  • 1 Sprig Thyme
  • 2 Sage leaves
  • 1 x Tomato Paste
  • 1 x Val Verde Tomato Passata
  • 1/2 Vegetable Stock Cube [Dissolved in 4 cups of hot water]

Method:

  1. In a large pot sauté onions & garlic in olive oil over a medium to high heat
  1. Add all the spices, herbs and tomato paste; Mix
  1. Add all the chopped vegetables; Mix
  1. Add drained beans and legumes; Mix
  1. Add tomato passata and dissolved stock in water (may need to add more water), then bring the soup to a boil
  1. Once bubbles begin forming on the surface, drop heat down to a low flame, put the lid on and allow the Moroccan scents to echo through the kitchen on a low simmer for 4-5 hours. Ensure you continue to mix the soup throughout this time, every 30-45 mins, to prevent the legumes/veggies sticking to the bottom of the pot and burn
