Eggplant Parma by All Things Equal

Here's a delicious, restaurant-quality dish you can make from the comfort of your own home. At All Things Equal, we ensure all steps are easy to follow for all individuals, including those with special needs. We hope you recreate our Eggplant Parma and enjoy! 


  • 2 large eggplants 
  • Tomato sauce of your choice 
  • 1 cup parmesan 
  • 1 cup basil leaves 
  • 1 ball of mozzarella 
  • Olive oil (for brushing) 


  • 1 x baking tray 
  • 1 x spatula 
  • 1 x ladle 
  • 1 x lasagne tray 
  • Baking paper


  1. Preheat your oven to 180°
  2. Take the tops off your eggplants 
  3. Slice thinly and put on a lined tray 
  4. Oil your eggplants 
  5. Bake for 15 - 20 minutes or until tender 
  6. Remove from the oven and cool 

Once eggplants are cool enough to touch, you can begin putting together your  parma. 

  1. Place a small amount of your tomato sauce on the bottom of your tray 8. Put one full layer of eggplant down to cover the base 
  2. Add another ladle of your sauce to cover your eggplant 
  3. Sprinkle ½ your parmesan and ½ your basil 
  4. Add the other half of your eggplant 
  5. Top with the other ½ of your sauce 
  6. Add the rest of your parmesan 
  7. Top with your mozzarella 
  8. Bake for 20 minutes or until bubbling and golden 
  9. Remove from oven 
  10. Top with remaining basil and let cool before serving
